Matcha in foods: the research on products and applications

Matcha is used as a functional ingredient, and food scientists have tested it in noodles, bread, biscuits, yogurt, ice cream, chocolate and drinks, measuring how it changes color, texture, antioxidant content and consumer acceptance.

Several papers also test how baking or cooking affects matcha's compounds.
